This coffee is decaffeinated using ethyl acetate (sugarcane process) which is a very safe naturally occurring solvent. The caffeine is extracted from the beans using sugar cane and water which enhances sweetness while maintaining the coffees great attributes. Ethyl acetate occurs in ripening fruit and is a highly volatile compound meaning that none of it remains after the coffee has been roasted.
Coffee is produced by farmers in the Popayan region and transported to Caldas for decaffeination process.
