We wanted an exotic and bold brew that cuts through milk.  Ibex represents the Ethiopian Sidamo component of this blend.  This is where we get some sweetness and fruit.  The Crocodile represents Timor.  According to folk lore, a crocodile turned into the island of Timor as repayment to a young boy who saved its life.  The Timorese component provides big chocolate notes and spice.      

Starts large and finishes sweet.  Rich espresso with some zing or enjoy a complex brew with milk.
